Kielbasa in Polish Sauce

Ingredients

  • 12 ounces light beer
  • 1 1/2 cups water
  • 2 cups chopped yellow onions
  • 2 pounds Kielbasa sausage, links
  • Salt
  • Freshly ground black pepper
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 2 tablespoons finely chopped parsley
Directions
In a saucepan, over medium heat, combine the beer, water, onions and sausage. Season with salt and pepper. Bring to a boil, reduce to a simmer and cook, covered, for 25 minutes. Remove the sausage from the pan and cool. Slice the sausage into 1 -inch pieces. In a large saute pan, over medium heat, melt the butter. Stir in the flour and cook for 4 to 6 minutes for a light brown roux. Stir in the vinegar, sugar and the reserved beer and onion mixture. Season with salt and pepper. Bring the mixture to a boil, reduce to a simmer and continue to cook until the sauce coats the back of a spoon, about 15 minutes. Add the sliced sausage and continue to cook for 5 minutes. Garnish with parsley. Enjoy !

KIELBASA AND POTATOES
Polish Kielbasa Ingredients :
  • 8 slices thick sliced bacon, diced
  • 2 lg. onions, chopped
  • 6 lg. potatoes, cooked, peeled and cut into 1 inch cubes
  • 1 Polish kielbasa or 2 lbs. Italian sweet sausage
  • 2 red bell peppers, cut into 1 inch sqs.
  • Salt and pepper
Polish Kielbasa Instructions
In a large skillet, fry bacon until brown and crisp. Remove and set aside. Add onion to drippings and saute until golden brown. Add potato cubes and stir over low heat until potatoes are lightly browned, about 15 minutes. Cook kielbasa in boiling, salted water for 15 minutes. Drain and cut into 1/2 inch slices.

If using sausages, brown on all sides in another skillet, cut into 1 inch slices. Add kielbasa or sausages to potatoes. Add red peppers ands stir over low heat for another 10 minutes. Season to taste with salt and pepper. Pile on a serving platter and sprinkle with reserved crisp bacon. Serve with marinated sliced cucumbers, slices of dark bread and glasses of cold beer. Serves 6. Polish Kielbasa Ingredients
  • 1 med. head cabbage
  • 1 c. minced onion
  • 1/2 c. butter
  • 1 tbsp. caraway seeds
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper
  • 1 (16 oz.) pkg. egg noodles
Polish Kielbasa Instructions :
Wash cabbage, remove outer leaves and slice into thin slices. In a large skillet melt butter. Saute onion until transparent. Add cabbage, caraway seeds, salt, pepper. Saute until cabbage is tender. Cook noodles and drain. Turn into serving dish. Add cabbage mixture and toss well. Add cooked kielbasa ring, cut into slices.

Easy Kielbasa-Cheese Bread Recipe

Polish Kielbasa Ingredients:
  • 3/4 cup warm water
  • 1 (16-ounce) box hot-roll mix
  • 1 large egg, beaten
  • 1 cup grated hard or semi-hard cheese of choice
  • 1 cup chopped Polish smoked kielbasa
  • 2 tablespoons butter, melted
Polish Kielbasa Instructions
Pour warm water into a medium bowl. Sprinkle yeast from hot roll mix over water and stir until dissolved. Add beaten egg and mix well. Blend in flour from roll mix, cheese and sausage. Continue blending until a sticky dough ball forms. Leave dough in the same bowl, cover with greased plastic wrap and let rise until doubled.

Punch down dough and transfer to a lightly floured surface. Form dough into an oblong loaf and place on a parchment-lined pan. Cover with greased plastic wrap and let rise until doubled.

Heat oven to 400 degrees. Brush top of bread with melted butter. Bake 30 minutes or until an instant-read thermometer registers 190 degrees. Remove from oven and transfer to a rack to cool completely before slicing...enjoy it !

CABBAGE AND POLISH KIELBASA SOUP

CABBAGE AND POLISH KIELBASA SOUP
Polish Kielbasa Ingredients
  • 1/4 c. barley
  • 1 c. water
  • 1 can chicken broth
  • 1 lg. can tomatoes
  • 1 tsp. paprika
  • 1 onion, chopped
  • 1 bay leaf
  • 2 cloves garlic, minced
  • 3 potatoes, 1/2-inch cubes
  • 1 small head cabbage, cut in 1-inch pieces
  • 1 1/2 lb. Polish kielbasa
Polish Kielbasa Instructions
Soak barley in enough water to cover for 1 hour. Drain.

Simmer barley in 1 cup water for 10 minutes. Add the tomatoes, paprika, minced garlic, onion and cabbage. Simmer 10 minutes more and add the diced potatoes and Kielbasa (diced into small pieces).

Simmer for 20-30 minutes or when potatoes and barley are done.

Season with salt and pepper to taste.

FRESH POLISH KIELBASA

FRESH POLISH KIELBASA
Polish Kielbasa Ingredients
  • 10 lb. coarse ground pork butt
  • 10 tsp. Kosher salt
  • 7 tsp. chopped marjoram
  • 5 tsp. minced garlic
  • 5 tsp. coarse ground pepper
  • 3 tsp. mustard seed
  • 3 tsp. oregano (optional)
  • 4 tsp. crushed red pepper (optional)
  • 1 bottle red wine
  • 1 carton natural hog casings
Polish Kielbasa Instructions
Mix salt and seasonings together in a bowl. Fold seasoning mixture into meat and mix thoroughly. Add wine into mixture so that meat squishes through fingers while mixing.

Let marinate overnight. Mix again with hands. Add water or wine until mixture is workable. Stuff into casings.

POLISH KIELBASA INGREDIENTS
  • 1 1/2 lb. pork butt
  • 1 bud garlic
  • 1/2 lb. veal
  • 1/3 c. water
  • 1/2 tsp. marjoram
  • Salt & pepper
POLISH KIELBASA INSTRUCTIONS
Cut meat into small pieces and run through the coarse blade of food chopper. Add water and finely grated bud of garlic with seasoning. Pull casing over horn and stuff with meat. This can be smoked or boiled fresh in a pot of water. Drain after 1 1/2 hours; brown on pan or under broiler.
