CABBAGE AND POLISH KIELBASA SOUP
Polish Kielbasa Ingredients
  • 1/4 c. barley
  • 1 c. water
  • 1 can chicken broth
  • 1 lg. can tomatoes
  • 1 tsp. paprika
  • 1 onion, chopped
  • 1 bay leaf
  • 2 cloves garlic, minced
  • 3 potatoes, 1/2-inch cubes
  • 1 small head cabbage, cut in 1-inch pieces
  • 1 1/2 lb. Polish kielbasa
Polish Kielbasa Instructions
Soak barley in enough water to cover for 1 hour. Drain.

Simmer barley in 1 cup water for 10 minutes. Add the tomatoes, paprika, minced garlic, onion and cabbage. Simmer 10 minutes more and add the diced potatoes and Kielbasa (diced into small pieces).

Simmer for 20-30 minutes or when potatoes and barley are done.

Season with salt and pepper to taste.

FRESH POLISH KIELBASA

FRESH POLISH KIELBASA
Polish Kielbasa Ingredients
  • 10 lb. coarse ground pork butt
  • 10 tsp. Kosher salt
  • 7 tsp. chopped marjoram
  • 5 tsp. minced garlic
  • 5 tsp. coarse ground pepper
  • 3 tsp. mustard seed
  • 3 tsp. oregano (optional)
  • 4 tsp. crushed red pepper (optional)
  • 1 bottle red wine
  • 1 carton natural hog casings
Polish Kielbasa Instructions
Mix salt and seasonings together in a bowl. Fold seasoning mixture into meat and mix thoroughly. Add wine into mixture so that meat squishes through fingers while mixing.

Let marinate overnight. Mix again with hands. Add water or wine until mixture is workable. Stuff into casings.

POLISH KIELBASA INGREDIENTS
  • 1 1/2 lb. pork butt
  • 1 bud garlic
  • 1/2 lb. veal
  • 1/3 c. water
  • 1/2 tsp. marjoram
  • Salt & pepper
POLISH KIELBASA INSTRUCTIONS
Cut meat into small pieces and run through the coarse blade of food chopper. Add water and finely grated bud of garlic with seasoning. Pull casing over horn and stuff with meat. This can be smoked or boiled fresh in a pot of water. Drain after 1 1/2 hours; brown on pan or under broiler.

ONE POT SAUERKRAUT AND POLISH KIELBASA

  • Polish Kielbasa
  • Sauerkraut
  • Peeled potatoes
  • 1 c. water
  • Salt and pepper
  • Parsley
  • 2-3 tbsp. brown sugar (more if needed to take out sour)
Polish Kielbasa Instructions
Add all together in one pot and cook about 1 hour.
